Information

Rice with a nice topping which goes well with nori.

Serving Size: 30-45

Source

This recipe was obtained from the “Hawaii’s Best Pupu & Potluck” cookbook.

Ingredients

Main:

  • 3 cup: Rice, raw.
  • 9: Shiitake mushrooms, dried.
  • 8 ounces: Imitation crab, shredded or chopped.
  • 8 ounces: Sour cream
  • 1 cup: Mayonnaise
  • 1/2 cup: Furikake
    Nori:
  • 1.6 ounces: Tamka yaki nori

Ingredient Considerations:

  • Temaki yaki nori often comes in packages of 10 sheets, weighing a total of 0.4 oz. Buying 4 packages is equivalent to the recipe requirements. Alternative nori may be substituted.

Instructions

  1. Wash and cook the 3 cups of rice. A rice cooker is preferred.
  2. Soak the dried shiitake mushrooms in water to reconstitute them. Discard any mushroom stems. After 15-20 minutes, remove the soaked shiitake mushrooms, squeezing out any excess water. Dice the mushrooms.
  3. Mix diced shiitake mushrooms, imitation crab, sour cream, and mayonnaise in a bowl.
  4. In a 9x13-inch pan, spread the cooked rice into a layer. Spread the furikake over the rice. Then, spread the crab mixture (from Step 3) over the furikake covered rice.
  5. Broil the pan for 8-10 minutes or until the top is appropriately browned.
  6. Cut into squares in the pan, serve with the nori.

Instruction Considerations:

  • Reconstitution time of shiitake mushrooms may vary, ensure that the mushrooms are fully reconstituted before continuing.
  • You may add additional ingredients and layer them between the rice to create a more layered dish.
