Ingredients

Main:

  • 1 1/2 pounds: Salmon fillet, with skin
  • 1 tablespoon: Vegetable oil
  • 1 bean: Vanilla
  • 3 tablespoons: Balsamic vinegar
  • 1 tablespoon: Honey mustard
  • 6 tablespoons: Butter, unsalted
    Seasoning Mixture:
  • 2 tablespoons: Brown sugar
  • 1 teaspoon: Paprika
  • 1 teaspoon: Garlic powder
  • 1 teaspoon: Sea salt
  • 1/2 teaspoon: Black pepper, coarsely ground

Instructions

  1. Mix the ingredients of the seasoning mixture together (brown sugar, paprika, garlic powder, sea salt, and black pepper).
  2. Brush the flesh of the fish with the vegetable oil, sprinkle only 2 tbsp of the seasoning mixture onto it, set the remainder on the side.
  3. Grill the salmon on medium-high heat for about 6 to 8 minutes per side, such that the fish flakes easily. Set on the side and cover with foil to keep warm.
  4. Split the vanilla bean lengthwise and use a spoon to scrape the seeds into a small saucepan. Stir in the remaining seasoning mixture.
  5. Cook the vanilla seed and seasoning mixture on medium for about 5 minutes.
  6. Add the butter to the saucepan; let it melt into a creamy sauce. (The heat may need to be intermittent to prevent the pan from getting too hot.)
  7. Drizzle the sauce onto the grilled salmon when serving.
